Butter Mint Fudge

Remember the Oh So Easy Coconut Fudge?



It was delicious right? Ever since whipping it up it has been demanded almost weekly by the boys.

But what does one do when one runs outta Coconut Oil? *gasp*

I know.. who runs out of Coconut Oil?

Well this girlfriend did.... and I had to make a plan... FAST!!



As controversial as this is going to be for some of you.

The age old war between the health benefits of using butter are always going to be there.
But this is my blog so I'm going to share the way I do things around here... right? right!!



I love butter..... and use it with all my home bakes.

One thing I have to put out there is know your food.

Know the source of your food.. All foods free-range and naturally raised are Super Good for you!!

Ok, enough about that.. moving on....





Right, Butter Mint Coconut Fudge.... we be making it :)

Exactly the same recipe as our Oh So Easy Coconut Fudge except minus the salt and instead of the Coconut Oil home-churned homemade (Thank you Farmer Brown at The Farmer's Market) butter.

Our butter is salted already! (Salt is used to preserve and add to the shelf life).

Homemade Mint Extract instead of the Vanilla variety.



Yes I made my own.... And its gorgeously delicous!!

So the recipe:

  • 1 cup coco powder

  • 1 cup honey

  • 1 cup butter

  • 1 teaspoon mint extract

That is all!!!!! Let me hear you say it....?? THAT IS ALL



Pop into the fridge to set.... and munch down when the chocolate craving hits you.

In this house there is one everyday from one or the other of the bodies!
